Ripping stock

Folks,
Say I’m splitting a piece of 1″x2″ stock, cut to length for a chisel tray. I saw neatly down my centre line but have to flip it end to end and start at the other because of the vise.
Is this the right way? How do I control the separation when the two kerf’s meet? Can I stop the irregularity of the cut faces or is this just a thing I have to live with and plane smooth?
